Florida, one of the last states where racing was still legal, recently closed all its tracks—another sign of the sport’s decline. Greyhounds, long bred for competitive racing, will mostly be retired as pets, but they will remain the fastest dogs in the world, thanks to their unique anatomy and behavior.
